Production Process of Vitamins
First fermentation
Glucose is converted into D-sorbitol and then fermented by microorganisms like Gluconobacter species to produce L-sorbose.
Second fermentation
L-sorbose is converted into the intermediate 2-keto-L-gulonic acid (2-KLG) by a mixed culture of bacteria, primarily Ketogulonicigenium vulgare and Bacillus species.
Chemical conversion
The 2-KLG is then converted to ascorbic acid through chemical steps that include esterification and lactonization.
Purification
The final crude vitamin C is purified, typically through recrystallization.
